Not sure if this would really call for a recipe since it’s basically a bunch of cut vegetables , but I’d like to share this anyway. Practice your knife skills and make a nice healthy side dish at the same time
This combination of different ingredients makes a fresh tomato salad, that is really nice on its own or as a side dish for a main with rich flavours, such as burritos.
I like to keep this salad very simple so all the flavours of the vegetables come through.
- 2 tomatoes, finely diced
- 1 medium sized red onion, finely diced
- 1 clove of garlic
- 1 small can of corn, drained
- 1 Sprig of parsley, finely chopped
- Add all the ingredients in a bowl and mix.
